What NOVA classifies

NOVA is a food classification system developed by researchers at the University of São Paulo. It ignores calories and nutrients entirely and asks a different question: how much industrial processing has this food been through?

That turns out to matter on its own. Two foods can carry near-identical nutrition labels while one is a home-cooked meal and the other is an industrial formulation of refined starches, oils and additives. NOVA is the axis that separates them.

The four groups

Group 1 — Unprocessed and minimally processed
Foods as they come, or altered only by drying, grinding, chilling, freezing or pasteurising. Fresh fruit and vegetables, plain grains, eggs, milk, meat, fish, dried legumes, nuts, plain yoghurt.
Group 2 — Processed culinary ingredients
Substances extracted from group 1 foods and used to cook with rather than eaten alone. Oils, butter, sugar, salt, vinegar, honey.
Group 3 — Processed foods
Group 1 foods with group 2 ingredients added, usually to preserve them or improve flavour. Tinned vegetables in brine, cheese, freshly baked bread, cured meat, fruit in syrup, salted nuts.
Group 4 — Ultra-processed
Industrial formulations made mostly from substances extracted from foods, plus additives that exist to make the result palatable and shelf-stable. Soft drinks, packaged snacks, instant noodles, reconstituted meat products, most breakfast cereals, mass-produced packaged bread.

How to spot group 4

The practical test is the ingredient list. Ultra-processed foods usually contain at least one substance you would never find in a domestic kitchen:

The heuristic is imperfect but useful: if the label reads like a specification rather than a recipe, it is probably group 4.

Why the group matters

A growing body of observational research associates high ultra-processed intake with poorer long-term outcomes, and it does so partly independently of the calorie and nutrient content. The proposed mechanisms include the speed at which these foods are eaten, their low satiety per calorie, the loss of intact food structure, and effects of certain additives.

This is association rather than proof of cause for every claim, and NOVA is a blunt instrument: it groups plain wholemeal supermarket bread with a soft drink. It is best read as one axis among several, which is exactly how NutriOptio uses it.

How NutriOptio applies it

NutriOptio applies NOVA by rule rather than by guesswork. When a barcode resolves against Open Food Facts, the official group recorded there is used directly. Otherwise the classification is derived from the ingredients and the nature of the food.

The group appears alongside glycemic load, Nutri-Score and the goal-weighted grade, so a food is never judged on processing alone. A group 3 cheese and a group 4 diet drink are different problems, and collapsing them into one number would hide more than it explains.
